So I broke out my new Rachel Ray 30 minute meals recipe book I got for Christmas and prepared my first dinner the other night. It was ginger lime chicken, string beans and wasabi smashed potatoes. I went all out for this -- I even bought a zester.It turned out really good, but somehow 30 minutes turned into about 70 minutes. I knew it would take longer the first time, but I was a little surprised that it took a that long -- and to be completely honest the green beans could have cooked a tad bit longer.
Next time I'm shooting for 60 minutes. I'm aiming to knock 10 minutes off each meal until I hit the mark. For my next effort ... smokey turkey shepherd's pie. There's a ton of ingredients, but I think I can handle it. I'll let you know how it goes. I'm sure you'll be waiting with bated breath.
