Yep, I'm mixing it up a bit and offering a recipe courtesy of my mom. She called the other night to share a quick, easy, and low-fat recipe for Brunswick stew she had tried, and now I'm passing it on to my faithful readers (yes, all three of you).
My hubby loves Brunswick stew, so when she said she had an easy recipe that actually tasted yummy, I was all for it. I'll admit I was pretty skeptical, but it's actually pretty tasty.
Here's what you need:
3 cans diced petite tomatoes
3 cans canned BBQ (1 pork, 1 beef, 1 chicken - my mom used all pork because that's all she could find. I couldn't find canned BBQ so I used two packs of Lloyds, 1 chicken and 1 pork, in the refrigerated food section)
1 can cream style corn (I added a handful or so of frozen corn too)
2 tbsp. worchestershire sauce
1 tbsp. lemon juice
1/4 cup ketchup
1 cup diced onion
*Optional (I threw in some Tabasco Sauce just for fun)
Here's what you do with it:
Throw it in a Crock Pot set on low and go to work. Seriously. That's it.
So go make some and enjoy. I'm not saying it will rock your world or anything ... but it's good. And for the amount of effort you put into it, it's real good.
P.S. We're supposed to get some nasty weather tonight and all day tomorrow. I'm excited about the snow possibilities, but I'm hoping we don't get all the ice they're calling for. I can work from home, but Andy has to drive in that mess -- so for his sake, let's hope the ice holds off. Stupid newspapers and their "must publish" attitudes.

I'm trying that recipe this week!! I've been searching for a good stew recipe. HOpe the weather for good for you all...don't know how you do it...we frose our butts off in NYC!! Too darn cold for us Southerners!!!
